  • 2 zucchini squash (thinly sliced)
  • 45 tomatoes (sliced)
  • 1.5 cups shredded mozzarella cheese
  • 0.5 cup shredded Parmesan cheese
  • 2 teaspoons garlic powder
  • 1 teaspoon basil
  • 1 teaspoon oregano
  • Salt and pepper to taste
  • 0.75 cup fine bread crumbs
  • 2 tablespoons melted butter

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a 9×9 baking dish with nonstick cooking spray.
  2. In a bowl, mix mozzarella, Parmesan, garlic powder, basil, oregano, salt, and pepper.
  3. Layer zucchini slices at the bottom of the dish, sprinkle with cheese mixture, then layer tomatoes followed by more cheese mixture. Repeat until all ingredients are used.
  4. Combine melted butter with breadcrumbs; sprinkle over the casserole.
  5. Cover with foil and bake for 25 minutes. Remove foil and bake for an additional 20 minutes until golden brown.
