  • 1 teaspoon salt
  • ½ cup vegetable oil
  • 1 ½ cups granulated sugar
  • 2 teaspoons vanilla extract
  • 2 cups shredded zucchini
  • Optional: ½ cup chopped walnuts

Instructions

  1. Preheat the oven to 350°F and prepare a 9×13" baking pan with foil and cooking spray.
  2. In a bowl, whisk together flour, cocoa powder, baking soda, and salt.
  3. In another bowl, mix oil, sugar, and vanilla until well combined. Gradually add dry ingredients and fold in zucchini gently.
  4. If needed, add water gradually to achieve the right batter consistency.
  5. Spread the batter into the prepared pan and bake for 25-30 minutes until set.
  6. While baking, prepare the frosting by mixing melted butter, cocoa powder, powdered sugar, milk, and vanilla until smooth.
  7. Once cooled slightly, spread frosting on brownies.
