  • 2 Zucchini, grated
  • 1 Carrot, grated
  • 1 Brown Onion, diced
  • ½ Red Capsicum, diced
  • 2 Turkey Bacon Slices, diced
  • 5 Eggs
  • ¼ cup Milk
  • 1 ¼ cup Grated Cheddar Cheese
  • 1 cup Self-Raising Flour

Instructions

  1. Preheat oven to 180C / 350F and line a square baking dish with baking paper.
  2. Grate zucchini and carrot into a colander, sprinkle with salt, and let sit for 10 minutes to drain moisture.
  3. In a frying pan, heat olive oil over medium heat. Add onion and turkey bacon; cook until golden brown. Remove from heat.
  4. Squeeze excess moisture from zucchini and carrot. In a mixing bowl, combine drained veggies, capsicum, cooked onion, turkey bacon, cheese (reserve some), and flour; mix well.
  5. In another bowl, whisk together eggs, milk, remaining olive oil, salt, and pepper. Incorporate into the veggie mixture until fully combined.
  6. Pour into the prepared baking dish; smooth the top and sprinkle with remaining cheese. Bake for 35–40 minutes until firm.
  7. Allow cooling slightly before cutting into squares.
