  • 1 block (14 oz) extra-firm tofu, pressed and cubed
  • 2 cups fresh pineapple chunks (or frozen, thawed)
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 medium onion, sliced
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 3 tablespoons cornstarch (for coating the tofu)
  • 2 tablespoons soy sauce or tamari
  • 2 tablespoons rice vinegar
  • 1 tablespoon maple syrup
  • 2 tablespoons neutral oil for cooking
  • Green onions and sesame seeds for garnish

Instructions

  1. Press the tofu for 15 minutes to remove excess moisture. Cut into 1-inch cubes and coat with cornstarch.
  2. Heat neutral oil in a skillet over medium-high heat. Cook the tofu until golden brown, flipping halfway through.
  3. Sauté sliced bell peppers and onion in the same pan until caramelized. Add minced garlic and ginger, stirring for 30 seconds.
  4. Incorporate fresh pineapple chunks and let them caramelize.
  5. Mix together soy sauce, rice vinegar, and maple syrup in a bowl; pour over the mixture in the pan along with the crispy tofu. Stir gently until everything is coated.
