  • 240ml dairy-free milk
  • 1 teaspoon apple cider vinegar
  • 210g self-raising flour
  • 50g cocoa powder
  • 100g caster sugar
  • 60ml sunflower oil
  • 210g dairy-free block butter (for frosting)
  • 200g icing sugar
  • 20ml aquafaba
  • Dark chocolate and Oreo cookies for decoration

Instructions

  1. Preheat your oven to 180°C (350°F) and line a muffin tin with cupcake liners.
  2. In a bowl, mix dairy-free milk with apple cider vinegar and let it sit for a few minutes.
  3. In another bowl, sift together self-raising flour, cocoa powder, caster sugar, baking powder, and bicarbonate of soda.
  4. Combine the wet and dry ingredients along with sunflower oil using an electric mixer until smooth.
  5. Divide the batter into the muffin tin and bake for 20–25 minutes or until a toothpick comes out clean.
  6. For the frosting, whip dairy-free butter with icing sugar until fluffy; gradually mix in aquafaba.
  7. Once cooled, frost each cupcake and decorate with melted dark chocolate, white chocolate buttons as bat wings, and half an Oreo cookie.
