  • 1 lb. Ground beef
  • 1 packet Taco seasoning
  • 2 cups Cooked rice
  • 2 cups Nacho cheese Doritos (lightly crushed)
  • 1 cup Shredded lettuce
  • 1 cup Diced tomatoes
  • 1 cup Shredded cheese (cheddar or Mexican blend)
  • ½ cup Sour cream
  • ½ cup Salsa or pico de gallo
  • 1 Sliced avocado or ½ cup Guacamole
  • ½ cup Black beans or corn kernels

Instructions

  1. In a large skillet over medium heat, cook the ground beef until browned. Drain excess fat if necessary, then stir in taco seasoning as per package instructions, adding water as needed.
  2. While the beef cooks, prepare rice according to package directions and set aside.
  3. In individual serving bowls, layer cooked rice as the base, followed by seasoned ground beef and crushed Doritos.
  4. Top with shredded lettuce, diced tomatoes, shredded cheese, sour cream, salsa or pico de gallo, sliced avocado or guacamole, and black beans or corn as desired.
