  • 3 pounds pickling cucumbers (or 4 pounds large cucumbers)
  • 1 large sweet onion
  • 4 cloves garlic, minced
  • 2 tablespoons pickling salt
  • 1 cup apple cider vinegar
  • 2.5 cups sugar
  • 2 teaspoons dill seed
  • 2 teaspoons mustard seed
  • 2 teaspoons celery seed
  • 0.5 teaspoon turmeric

Instructions

  1. Prepare the cucumbers by slicing them lengthwise and removing the seeds.
  2. Finely dice the cucumbers and onion (using a food processor if desired).
  3. In a non-reactive pot, combine diced vegetables with salt and let sit for 2 hours.
  4. Drain excess liquid from the mixture using a strainer.
  5. In a medium pot, combine vinegar, sugar, garlic, dill seed, celery seed, mustard seed, and turmeric; bring to a boil.
  6. Stir in the drained cucumber and onion mixture; return to boil.
  7. Reduce heat and simmer for about 10 minutes.
  8. Cool completely before storing in jars.
