  • 10 tbsp butter
  • 1 1/2 cups dark chocolate chips (divided)
  • 1 cup sugar
  • 1/4 cup dark brown sugar
  • 3 eggs
  • 2 tsp vanilla extract
  • 3/4 cup all-purpose flour
  • 1/3 cup unsweetened cocoa powder
  • Candy eyes for decoration
  • Powdered sugar and cream for icing

Instructions

  1. Preheat your oven to 350°F (175°C) and line a 9 x 9 inch cake pan with parchment paper.
  2. In a microwave-safe bowl, melt the butter with 1 cup of dark chocolate chips until smooth. Stir well.
  3. Combine sugars with melted chocolate mixture, then beat in eggs and vanilla until well blended.
  4. Gradually add flour, cocoa powder, baking powder, and salt; mix until just combined. Fold in remaining chocolate chips.
  5. Spread batter evenly in prepared pan and bake for 25–30 minutes. Let cool before cutting into squares.
  6. To decorate, melt remaining chocolate chips with coconut oil and coat each brownie. Once set, drizzle with icing made from powdered sugar and cream, then place candy eyes on top.
