  • 2 boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • ½ tsp garlic powder
  • ¼ tsp cayenne pepper
  • Salt and pepper to taste
  • 4 slices turkey bacon
  • 1 ripe avocado, sliced
  • 2 slices pepper jack or cheddar cheese
  • ¼ cup pickled jalapeños
  • 2 brioche buns, toasted
  • ¼ cup mayonnaise
  • 1 tbsp adobo sauce
  • ½ tsp lime juice

Instructions

  1. Pound the chicken breasts to even thickness. Rub with olive oil and season with smoked paprika, garlic powder, cayenne pepper, salt, and pepper.
  2. Preheat grill to medium-high heat and cook the chicken for about 4–5 minutes per side until it reaches an internal temperature of 165°F (74°C). Add cheese in the last minute to melt.
  3. In a small bowl, mix mayonnaise with adobo sauce and lime juice until smooth.
  4. Toast brioche buns on the grill until golden brown.
  5. Assemble sandwiches by spreading chipotle mayo on both sides of the buns followed by layers of avocado, grilled chicken with melted cheese, turkey bacon, and pickled jalapeños.
  6. Serve hot alongside fries or a fresh salad.
