  • 1/3 cup vegetable oil
  • 5 cloves garlic (minced)
  • 1 cup grated Parmesan cheese
  • 1 Tbsp cornstarch
  • 2 tsp black pepper
  • 1 1/2 tsp kosher salt
  • 1 tsp onion powder
  • 1 tsp paprika
  • 1 tsp chili powder
  • 1/4 cup minced fresh cilantro

Instructions

  1. Preheat the oven to 400°F (200°C) and line baking sheets with parchment paper.
  2. Wash and dry the potatoes. Cut each potato into eight evenly sized wedges.
  3. In a large mixing bowl, combine potato wedges with vegetable oil and minced garlic; mix well.
  4. Add Parmesan cheese, cornstarch, spices, and cilantro; stir until evenly coated.
  5. Spread the wedges on prepared baking sheets with space between them.
  6. Bake for 15 minutes at 400°F (200°C), then reduce temperature to 375°F (190°C) and bake for an additional 40 minutes until golden brown.
