  • 1 small onion, finely diced
  • 1 qt vegetable or chicken stock
  • 1 cup pumpkin puree
  • 1 small bunch fresh thyme sprigs
  • 1 cup arborio rice
  • ½ cup white apple vinegar
  • 2 tbsp butter
  • ¾ cup freshly grated parmesan cheese

Instructions

  2. In the same pot, sauté onion until softened. Heat stock separately.
  3. Add thyme, salt, pepper, and arborio rice; toast for about one minute.
  4. Pour in white apple vinegar and stir until absorbed. Gradually add warm stock, stirring constantly for about 20-25 minutes until creamy.
  5. Remove thyme sprigs; stir in butter and parmesan until melted. Serve garnished with crispy turkey bacon.
