  • 1 cup pumpkin puree
  • 1 cup milk of choice
  • 2 large eggs
  • ⅓ cup pure maple syrup or honey
  • ¼ cup unsalted butter or coconut oil, melted
  • 2 teaspoons pure vanilla extract
  • ½ cup chopped pecans, toasted (omit for nut-free)

Instructions

  1. Preheat the oven to 375°F and grease a 9×9-inch baking dish.
  2. In one bowl, mix together the rolled oats, pumpkin pie spice, baking powder, and salt.
  3. In another bowl, whisk together the pumpkin puree, milk, eggs, maple syrup, melted butter or coconut oil, and vanilla extract until smooth.
  4. Combine the wet mixture into the dry ingredients and stir until fully mixed.
  5. Pour the batter into the prepared baking dish and top with toasted pecans.
  6. Bake for 30-34 minutes or until set in the center; check with a toothpick for doneness.
  7. Allow to cool for five minutes before cutting into squares.
