  • 4 cups shredded zucchini
  • 2 large eggs
  • ¼ cup shredded Parmesan cheese
  • ½ cup shredded mozzarella cheese (plus more for topping)
  • 32 ounces meaty spaghetti sauce
  • 4 ounces pepperoni
  • Optional: green peppers, onions, mushrooms

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Grate the zucchini and drain excess moisture. In a bowl, mix zucchini with eggs, Parmesan cheese, mozzarella, salt, minced garlic, and Italian seasoning.
  3. Spread half of the zucchini mixture in a baking dish followed by half of the spaghetti sauce and half of the pepperoni. Repeat layers.
  4. Top with remaining mozzarella and any additional toppings.
  5. Cover with foil and bake for 30 minutes; remove foil and bake an additional 10 minutes until golden brown.
  6. Let cool slightly before slicing and serve warm.
