  • 4 bell peppers
  • 4 cups fresh spinach
  • 1 tub ricotta cheese (15 oz)
  • 1 cup shredded mozzarella cheese
  • ½ cup grated parmesan cheese
  • 2 large eggs
  • Fresh herbs (basil, parsley)
  • 1 Tbsp olive oil
  • ½ cup breadcrumbs
  • 1 Tbsp oil

Instructions

  1. Preheat your oven to 400°F (204°C). Halve the bell peppers lengthwise, remove seeds, and place cut side up on a parchment-lined baking sheet. Brush with olive oil.
  2. Bake for about 20 minutes until slightly softened. Drain excess water from the peppers.
  3. While baking, microwave spinach until wilted (15-30 seconds). In a bowl, mix wilted spinach with ricotta, mozzarella, parmesan, green onions, herbs, spices, pepper, and eggs until well combined.
  4. Stuff each pepper half with the filling evenly.
  5. Mix breadcrumbs with oil and sprinkle over stuffed peppers. Return to oven at 350°F (176°C) for another 30 minutes or until golden brown.
