  • 6 ounces fresh mozzarella pearls
  • 12 ounces cherry tomatoes
  • 1 demi baguette
  • ½ cup basil pesto
  • Gel food coloring (black)
  • Olive oil
  • Balsamic vinegar glaze
  • Fresh basil

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Place mozzarella pearls in a silicone skull mold on a baking sheet and bake for 6-7 minutes until melted. Press down lightly and let cool.
  3. Increase oven temperature to 475°F (245°C). Halve cherry tomatoes, place cut side down on parchment-lined baking sheet, drizzle with olive oil, season with salt and pepper, and roast for 10-15 minutes.
  4. Slice baguette into ½-inch pieces and toast on another baking sheet for 8-10 minutes until golden.
  5. Mix basil pesto with black gel food coloring until desired shade is achieved.
  6. Spread black pesto over toasted baguette slices and return to the oven for 8-10 minutes.
  7. Assemble by topping each bruschetta with roasted cherry tomatoes and mozzarella skulls.
