Ingredients

Scale
  • 2 medium zucchini (about 2 pounds), sliced
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 1 pound lean ground beef
  • 2 tsp Italian seasoning
  • 1/2 tsp kosher salt
  • 1/2 tsp black pepper
  • 1 can (28 ounces) diced tomatoes, drained
  • 2 cups shredded mozzarella cheese

Instructions

  1. Preheat oven to 350°F. Slice zucchini and sprinkle with salt; let sit in a colander for 15 minutes to draw out moisture.
  2. Heat olive oil in a large skillet over medium-high heat. Sauté onion for about 2 minutes, add garlic and ground beef; cook until browned.
  3. Mix in drained tomatoes, Italian seasoning, salt, and pepper; remove from heat.
  4. In an 8×8 baking dish, layer half of the beef mixture, half of the zucchini slices, and half of the mozzarella cheese. Repeat layers.
  5. Bake uncovered for 20 to 25 minutes until cheese is melted and golden brown. Let rest for 10 minutes before serving.
