  • ⅔ cup uncooked white rice
  • 1 pound ground chicken breast
  • ½ teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • 1 teaspoon Italian seasoning
  • 1 small red onion, diced
  • 2 cloves garlic, minced
  • 1 zucchini, diced
  • ½ cup cherry tomatoes, quartered
  • ½ cup kalamata olives, chopped
  • ½ cup feta cheese (plus extra for topping)
  • 2 tablespoons fresh dill, chopped
  • 3 bell peppers (halved and seeded)
  • 1 tablespoon extra virgin olive oil
  • ½ cup water
  • Lemon wedges (for serving)

Instructions

  1. Preheat your oven to 350°F.
  2. Cook the rice according to package instructions.
  3. Slice each bell pepper in half lengthwise and place them cut side up in a baking dish.
  4. In a large skillet over medium heat, heat olive oil and sauté the ground chicken with salt and pepper until no longer pink. Drain excess liquid.
  5. Add Italian seasoning, red onion, garlic, and zucchini; cook for another 2 minutes.
  6. In a mixing bowl, combine cooked rice with the chicken mixture, cherry tomatoes, olives, feta cheese, and dill.
  7. Fill each pepper half with the mixture and top with extra feta.
  8. Pour water into the baking dish around the peppers. Cover with foil and bake for 40 to 45 minutes.
  9. Serve hot with a squeeze of lemon juice.
