  • 7 large bell peppers
  • 1 pound lean ground beef
  • 1½ cup cooked brown rice
  • 1 medium onion (diced)
  • 23 garlic cloves (minced)
  • 14.5 ounces diced tomatoes (1 can)
  • 1 cup shredded cheddar jack cheese
  • Olive oil, spices, salt, and pepper

Instructions

  1. Preheat your oven to 375°F.
  2. Cut the tops off the bell peppers and remove the seeds. Place them cut-side up in a baking dish.
  3. In a large skillet, heat olive oil over medium heat. Sauté diced onion until soft, then add minced garlic and cook until fragrant.
  4. Add ground beef to the skillet; cook until browned. Stir in cooked rice, diced tomatoes, tomato paste, oregano, paprika, salt, and pepper. Simmer for about 5 minutes.
