- 2 pounds ground beef (or ground chicken/turkey)
- 2 yellow onions, chopped
- 2 poblano peppers, seeded and chopped
- 28 oz crushed fire-roasted tomatoes
- 8 oz tomato paste
- 6 oz cream cheese
- 2 cups shredded cheddar cheese
- 2–3 cups chicken or beef broth
- 1 can mixed chili beans, drained
- Chop onions and poblano peppers finely. Measure spices.
- In a skillet, brown the ground beef until fully cooked; drain excess fat.
- Place the meat in the slow cooker and add all chopped vegetables and seasoning ingredients.
- Cover and cook on low for about 120 minutes until heated through.
- Stir in cream cheese until melted, then gradually add shredded cheddar cheese.
- Remove bay leaves before serving. Top with mixed chili beans and garnish with cilantro, green onions, avocado, and Greek yogurt.
