  • 2 pounds ground beef (or ground chicken/turkey)
  • 2 yellow onions, chopped
  • 2 poblano peppers, seeded and chopped
  • 28 oz crushed fire-roasted tomatoes
  • 8 oz tomato paste
  • 6 oz cream cheese
  • 2 cups shredded cheddar cheese
  • 23 cups chicken or beef broth
  • 1 can mixed chili beans, drained

Instructions

  1. Chop onions and poblano peppers finely. Measure spices.
  2. In a skillet, brown the ground beef until fully cooked; drain excess fat.
  3. Place the meat in the slow cooker and add all chopped vegetables and seasoning ingredients.
  4. Cover and cook on low for about 120 minutes until heated through.
  5. Stir in cream cheese until melted, then gradually add shredded cheddar cheese.
  6. Remove bay leaves before serving. Top with mixed chili beans and garnish with cilantro, green onions, avocado, and Greek yogurt.
