  • 5 chicken cutlets
  • ½ cup mayonnaise
  • 3 tbsp Greek yogurt
  • 1 tsp Dijon mustard
  • 2 tbsp lemon juice
  • ¼ cup freshly grated Parmesan cheese
  • 2 romaine hearts (chopped)
  • 12 French baguettes
  • Panko and regular breadcrumbs for breading

Instructions

  1. Prepare the Caesar dressing by mixing mayonnaise, Greek yogurt, Dijon mustard, Worcestershire sauce, lemon juice, garlic, pepper, and Parmesan until smooth. Mix some dressing with chopped romaine and refrigerate.
  2. Pound chicken cutlets to an even thickness and season with salt and pepper.
  3. Set up a breading station: mix flour with salt and paprika in one plate; whisk eggs in another; combine panko crumbs, breadcrumbs, herbs, and seasonings in the last plate.
  4. Dredge each chicken cutlet through flour, dip into eggs, then coat with breadcrumb mixture.
  5. Heat oil in a frying pan over medium heat and fry chicken until golden brown on both sides (4-5 minutes each). Drain on a wire rack.
  6. Slice baguettes lengthwise and spread with reserved dressing. Layer with fried chicken cutlet and Caesar salad mix before serving.
