  • ¼ cup diced sundried tomatoes

  • 6 oz pasta (small shells)
  • 1 cup heavy whipping cream
  • 68 cups chicken broth

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Add chicken seasoned with Italian seasoning, salt, and pepper. Cook until browned (4-5 minutes).
  2. Add onions, carrots, celery, sundried tomatoes, and garlic; cook until veggies are translucent (3-4 minutes).
  3. Gradually sprinkle in flour while stirring; add tomato paste if using.
  4. Slowly whisk in chicken broth, deglazing the pot to avoid lumps.
  5. Bring to a boil; add pasta and remaining seasonings. Cover and simmer for about 20 minutes.
  6. Stir in cream and spinach; simmer for an additional 5 minutes.
  7. Taste and adjust seasonings before serving hot.
