  • 1/2 teaspoon ground nutmeg
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 4 ounces softened cream cheese
  • 1/4 cup granulated sugar (for filling)
  • 3 tablespoons all-purpose flour (for filling)

Instructions

  1. Preheat your oven to 350°F and prepare a 9×5-inch loaf pan.
  2. In a large bowl, whisk together egg, pumpkin puree, light brown sugar, granulated sugar, coconut oil, sour cream, vanilla extract, cinnamon, pumpkin pie spice, and ground nutmeg until smooth.
  3. Gently fold in flour, baking powder, baking soda until just combined.
  4. Pour two-thirds of the batter into the prepared pan.
  5. In another bowl, mix cream cheese with granulated sugar and flour until smooth; layer over the batter.
  6. Spoon remaining batter on top and smooth gently.
  7. Bake for about 48 minutes or until a toothpick comes out clean from the center.
  8. Cool for 15 minutes in the pan before transferring to a wire rack.
