  • 3/4 cup all-purpose flour

  • 1/2 teaspoon baking powder
  • 1/8 teaspoon baking soda

  • Cinnamon Sugar (2 to 3 tablespoons)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease mini loaf pans or muffin tins and line with parchment paper.
  2. In a medium bowl, whisk together the egg, granulated sugar, brown sugar, pumpkin, oil, and vanilla until smooth.
  3. In another bowl, sift together the flour, baking powder, baking soda, pumpkin pie spice, and salt. Gradually add to the wet mixture and stir until just combined.
  4. Divide the batter evenly among the prepared pans. Sprinkle generously with cinnamon sugar and gently swirl with a toothpick.
  5. Bake for 20-30 minutes or until a toothpick comes out mostly clean. Allow to cool in the pan for about 10 minutes before transferring to a wire rack.
