  • 1/4 cup fresh lime juice (about 2 limes)
  • 1/4 cup olive oil
  • 1/4 cup fresh cilantro, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup cooked rice (white or brown)
  • 1 can black beans, rinsed and drained
  • 1 cup corn (fresh, frozen, or canned)
  • 1 avocado, sliced
  • 1/2 cup red onion, diced
  • 1/2 cup feta cheese, crumbled (optional)
  • Extra cilantro for garnish
  • Lime wedges for serving

Instructions

  1. In a mixing bowl, whisk together lime juice, olive oil, cilantro, garlic, cumin, chili powder, salt, and pepper.
  2. Place the flank steak in a resealable bag or shallow dish and pour the marinade over it. Seal and refrigerate for at least 30 minutes (preferably 2 to 4 hours).
  3. Cook rice according to package instructions.
  4. Heat black beans in a saucepan until warm.
  5. Preheat grill or grill pan over medium-high heat; oil it to prevent sticking.
  6. Grill the marinated steak for about 4-5 minutes on each side until medium-rare (internal temp of 130°F/54°C). Rest for 5-10 minutes before slicing against the grain.
  7. Assemble bowls with rice as the base topped with black beans, corn, sliced steak, avocado, and optional feta cheese.
