  • 1 lb boneless chicken thighs, cut into bite-sized pieces
  • 1 medium zucchini, sliced
  • 3 garlic cloves, smashed
  • 1/4 cup light soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon sesame oil
  • 2 teaspoons sugar (or honey)
  • Cooking oil for sautéing

Instructions

  1. In a mixing bowl, combine the chicken with cornstarch, soy sauce, sesame oil, sugar (or honey), and optional rice apple vinegar. Let marinate for at least 30 minutes.
  2. Heat cooking oil in a wok or large frying pan over medium-high heat. Sauté smashed garlic until fragrant.
  3. Add marinated chicken and cook until no longer translucent, about 2 minutes. Remove from pan.
  4. In the same pan, add zucchini and stir-fry for about 5 minutes until tender.
  5. Return chicken to the pan with zucchini, add oyster sauce, and stir-fry together for another 2-3 minutes until fully cooked.
  6. Serve warm over rice or noodles.
