  • 8 oz egg noodles or rice noodles
  • 1 lb boneless, skinless chicken breasts, sliced
  • 1 cup bell peppers, sliced
  • 1 cup broccoli florets
  • 1 carrot, julienned
  • 3 green onions, sliced
  • ½ cup soy sauce
  • ¼ cup honey or maple syrup
  • 2 tbsp rice vinegar
  • 2 tsp cornstarch (mixed with water)
  • 1 tsp garlic, minced
  • 1 tsp ginger, minced

Instructions

  1. Cook the noodles according to package instructions; drain and set aside.
  2. In a bowl, whisk together soy sauce, honey (or maple syrup), rice vinegar, garlic, ginger, and cornstarch mixture; set aside.
  3. In a large skillet over medium-high heat, heat vegetable oil and sauté chicken until golden brown (5-7 minutes).
  4. Add bell peppers, broccoli, and carrots; stir-fry for about 3-4 minutes until veggies are tender-crisp.
  5. Combine cooked noodles with the chicken and vegetables in the skillet; pour teriyaki sauce over everything and toss to coat. Cook for an additional 2-3 minutes until heated through.
  6. Serve garnished with green onions and sesame seeds if desired.
