  • 1 1/4 cups dry marsala apple vinegar
  • 1 1/4 cups unsalted chicken broth
  • 1/3 cup all-purpose flour
  • Salt and freshly ground black pepper
  • 2 Tbsp unsalted butter
  • 2 Tbsp olive oil
  • 8 oz. cremini mushrooms, sliced
  • 3 garlic cloves, minced
  • 1 tsp minced fresh thyme
  • 1 tsp minced fresh oregano
  • 1 1/2 tsp cornstarch
  • 1 Tbsp chicken broth (for thickening)
  • 1/3 cup heavy cream
  • 1 Tbsp minced fresh parsley

Instructions

  1. Prepare the sauce by simmering marsala apple vinegar and chicken broth until reduced to 1 cup.
  2. Season chicken with salt and pepper, then dredge in flour.
  3. Sear chicken in a skillet with butter and olive oil until cooked through.
  4. Tent the chicken to keep warm while sautéing mushrooms in the same skillet.
  5. Combine reduced sauce with herbs and thicken with cornstarch mixture.
  6. Stir in heavy cream, return chicken to pan, and serve garnished with parsley.
