  • 2 cups mascarpone cheese
  • 1 cup heavy cream
  • 1/2 cup cherry juice
  • 1/4 cup granulated sugar
  • 1 package ladyfingers
  • 1 cup fresh cherries, pitted and chopped
  • 1/4 cup cocoa powder

Instructions

  1. In a large mixing bowl, beat mascarpone cheese and heavy cream until fluffy (2-3 minutes).
  2. Add cherry juice and vanilla extract; mix until well combined.
  3. In another bowl, combine sugar and cherry preserves; add to the mascarpone mixture and stir in chopped cherries.
  4. Dip ladyfingers quickly in cherry juice and layer them in a baking dish. Spread half of the mascarpone mixture over them.
  5. Repeat with another layer of dipped ladyfingers and remaining mascarpone mixture.
  6. Cover and refrigerate for at least 4 hours or overnight.
  7. Before serving, dust with cocoa powder and sprinkle dark chocolate shavings.
