  • 8 oz spaghetti or penne pasta
  • 2 cups cherry tomatoes, diced

  • 2 tbsp balsamic vinegar
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package instructions until al dente. Drain and set aside.

  3. Heat olive oil in a skillet over medium heat, cooking chicken for 5–7 minutes per side until golden brown. Let rest before slicing.
  4. In a mixing bowl, combine diced tomatoes, minced garlic, chopped basil, balsamic vinegar, olive oil, and salt.
  5. Toss the cooked pasta in the skillet with chicken drippings. Slice the chicken and place on top of the pasta. Add bruschetta topping.
  6. Serve warm garnished with grated Parmesan cheese and extra basil.
