  • 1 teaspoon baking soda
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon kosher salt
  • For filling: 5 tablespoons unsalted butter (softened), 3/4 cup light brown sugar (packed), 1 teaspoon cinnamon, 2 tablespoons cake flour
  • For glaze: 1 cup powdered sugar, 1/2 teaspoon cinnamon, 3 tablespoons unsalted butter (melted and cooled), 2 1/2 tablespoons milk

Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a stand mixer, cream together the room temperature butter, granulated sugar, and brown sugar until fluffy. Add eggs and vanilla; mix well.
  3. In a separate bowl, whisk dry ingredients and gradually add to the wet mixture until just combined. Chill dough for one hour.
  4. Make the filling by mixing all filling ingredients until smooth; form into balls.
  5. Scoop chilled dough, create a well, fill with the cinnamon mixture, seal, and roll into balls.
  6. Bake for about 11–13 minutes or until lightly golden. Cool before icing with the prepared glaze.
