  • ¾ cup peach preserves
  • ¼ cup fruit juice or broth
  • 2 tablespoons extra virgin olive oil
  • 2 teaspoons soy sauce
  • 2 teaspoons apple cider vinegar
  • 2 teaspoons Dijon coarse ground mustard
  • 2 teaspoons garlic, minced
  • 1 ½ teaspoons kosher salt
  • ½ teaspoon black pepper
  • ¼ teaspoon red pepper flakes
  • 4 salmon filets (about pounds, skins on)
  • 1 tablespoon extra virgin olive oil
  • 2 medium peaches, pitted and thinly sliced
  • Parsley for garnish

Instructions

  1. In a medium bowl, combine peach preserves, fruit juice or broth, olive oil, soy sauce, apple cider vinegar, Dijon mustard, garlic, salt, black pepper, and red pepper flakes.
  2. Reserve half of the marinade and refrigerate for later use.
  3. Place the salmon fillets in a resealable plastic bag and pour in the remaining half of the marinade. Seal the bag tightly and shake gently to coat all sides of the salmon. Refrigerate for at least 30 minutes.
  4. Preheat your oven to 375°F (190°C).
  5. In a medium cast iron skillet over medium-high heat, add oil. Once hot, carefully place marinated salmon fillets in the skillet skin side up. Cook for about 2-3 minutes until they are seared and golden brown.
  6. Flip the salmon fillets so that their skin side is down. Add sliced peaches around them in the skillet. Cook for an additional 2-3 minutes until peaches soften slightly.
  7. Remove the skillet from heat. Pour reserved marinade over both salmon fillets and peaches evenly.
  8. Transfer your skillet to the preheated oven. Bake for 12-15 minutes or until salmon is cooked through.
