  • 1 lb. mafaldine noodles (or fettuccini/linguini)
  • 3 chicken breasts
  • 4 tablespoons olive oil
  • 6 tablespoons butter
  • 68 cloves minced garlic
  • 2 cups heavy whipping cream
  • 1.5 cups shredded parmesan cheese
  • 4 tablespoons blackened seasoning
  • Salt and pepper to taste

Instructions

  1. Pound chicken breasts to an even thickness of about 1/4 inch.
  2. Rub with olive oil and season both sides generously with blackened seasoning.
  3. Heat a skillet over medium-high heat, add olive oil, and cook chicken for 3–4 minutes per side until golden brown.
  4. Reduce heat, add butter and minced garlic, then cook until chicken reaches an internal temperature of 165°F.
  5. Remove chicken and cover to keep warm. In the same skillet, melt remaining butter, sauté garlic, then stir in heavy cream and remaining seasoning; simmer until thickened.
  6. Cook noodles according to package instructions; reserve some pasta water before draining.
  7. Stir parmesan cheese into the sauce until melted, mix in reserved pasta water for desired consistency, then combine with cooked noodles and sliced chicken.
