  • 1/4 onion (quartered)
  • 1 garlic clove
  • 2 cups long grain white rice
  • 1 1/2 cups water
  • 1/8 cup olive oil
  • 1 tbsp chicken bouillon
  • Pinch of whole cumin

Instructions

  1. Make the Tomato Sauce: Boil quartered tomatoes, onion, and garlic in 4 cups of water until soft (about 5 minutes). Cool slightly, then blend with 1 cup of water and chicken bouillon until smooth.
  2. Cook the Rice: Heat olive oil in a large pot over medium heat. Add rice and toast for about 5 minutes. Stir in diced onion and cook until golden. Add minced garlic, tomato sauce, remaining water, and spices. Stir well.
  3. Simmer: Cover and cook on medium heat for 12 minutes without lifting the lid. After cooking, let it rest covered for an additional 5 minutes before fluffing with a fork.
