  • 2 large eggs (room temperature)
  • 1 teaspoon pure vanilla extract
  • 1 1/2 cups diced apples (Granny Smith or Honeycrisp)
  • ¾ cup all purpose flour for crumble topping
  • ¼ cup packed light brown sugar for crumble topping
  • 2 tablespoons granulated sugar for crumble topping
  • 1 teaspoon ground cinnamon for crumble topping (optional)
  • 4 tablespoons unsalted butter (melted) for crumble topping

Instructions

  1. Preheat your oven to 400°F and prepare a muffin tin with liners.
  2. In a bowl, combine the crumble topping ingredients: flour, sugars, cinnamon, and melted butter until clumpy.
  3. In another bowl, whisk together the dry ingredients for the muffins: flour, baking powder, salt, and cinnamon.
  4. In a large bowl, beat together the butter and sugars until fluffy; add eggs, sour cream, and vanilla.
  5. Gradually add half of the dry mixture to the wet ingredients; mix briefly before adding milk. Combine with remaining dry ingredients and fold in diced apples.
  6. Fill muffin cups three-quarters full with batter and sprinkle crumble topping on each.
  7. Bake for about 20 minutes or until a toothpick comes out clean; cool before enjoying.
